Gamjatang is meant to be eaten by removing the tender pork from the bones yourself. Enjoy the meat with the rich broth, and try dipping it in the mustard sauce if provided. Perilla leaves and perilla seed powder are often enjoyed with the stew. At the end of the meal, ask the staff if fried rice can be prepared with the remaining broth. The restaurant is open 24 hours, but waiting times may vary depending on the time of day.
