How to Eat Dwaeji Gukbap / Sundae Gukbap
Taste the broth, pork, sundae, and seasoning in your own order.
WHAT IS IT?
Dwaeji gukbap and sundae gukbap are warm pork soups served with rice and seasonings. Start with the broth, then build each spoonful at your own pace.
HOW TO EAT IT
Try the pork and sundae together. Take a piece of pork and sundae with a little broth to experience the main flavors of the soup.
Adjust the seasoning. Add salted shrimp, salt, pepper, or spicy seasoning gradually according to your taste.
Eat with rice. Mix some rice into the broth or take bites of rice with the soup and meat.

Take it one relaxed bite at a time.
LOCAL TIP
Start with a small amount of seasoning. You can always add more after tasting the broth and meat together.
TABLE TIP
Refill Your Side DishesNeed more banchan? Just ask the staff. Most Korean restaurants are happy to refill common side dishes at no extra charge, and some have a self-service banchan bar. A few dishes made with more expensive ingredients may be limited or not refillable. Don’t be shy—asking for more banchan is completely normal in Korea.
The soup is meant to be adjusted to your taste, so there is no single correct balance of broth, seasoning, rice, pork, and sundae.
