ABOUT

Pyeongidambaek Bone Kalguksu is a Korean noodle restaurant in Seogyo-dong, between Mangwon and Hapjeong. Its signature dish is Bone Kalguksu, an unusual combination of handmade-style knife-cut noodles, a clear savory broth and large pieces of pork neck bone. The restaurant's official story traces the dish back to a pork-neck-bone soup made by the mother of its Italian-trained head chef, before the concept developed into the restaurant brand it is today. The menu is deliberately focused rather than enormous. Along with Bone Kalguksu, Bibim Kalguksu is another important choice, with chewy noodles coated in a sweet-spicy sauce, while Bone Soup with Rice provides an option for travelers who prefer rice to noodles. The simple menu makes the restaurant relatively easy to navigate for a first-time visitor.

WHAT LOCALS SAY

The signature Bone Kalguksu is often praised for its large pieces of pork attached to the bones. Several reviews describe the portion as substantial and filling, with two or more sizable pieces of bone meat served alongside the noodles. The pork is generally considered tender, and diners can dip the meat in the accompanying sauce rather than eating it only with the broth. The broth is one of the restaurant's defining characteristics. It is relatively clear and clean rather than a thick, creamy pork broth, which gives the dish a lighter impression despite the large amount of meat. The noodles are thick and chewy, and the restaurant's use of aged noodles is mentioned in reviews. Not everyone finds the seasoning strong enough, however; some diners have described the broth as somewhat mild or oily, so travelers expecting a heavily seasoned soup should know that this is intentionally a more restrained style. Bibim Kalguksu deserves attention as well. Some local diners actually prefer it to the signature soup, describing the noodles as particularly springy and the sweet-spicy sauce as addictive. This gives visitors two very different experiences from the same kitchen

a warm, savory bone broth or a cool, spicy-sweet noodle dish. The restaurant has also had periods of lunch waiting, and small two-person tables have been described as somewhat cramped.

Pyeongidambaek is a good choice if you want to try something that is clearly Korean but not one of the standard tourist dishes. Bone Kalguksu looks unusual when it arrives—a bowl of noodles with large pork bones—but the flavors themselves are familiar and approachable. If you normally enjoy pork noodle soups, this is an easy dish to understand even if you have never seen Bone Kalguksu before. The restaurant is between Mangwon and Hapjeong, so it fits naturally into a neighborhood walking itinerary rather than a central tourist route. Current listings show a 15:00–17:00 break and possible waiting during busy periods. There is no dedicated parking, so public transportation is the easier option. For a first visit, order the Bone Kalguksu; if you are visiting with someone, ordering one Bone Kalguksu and one Bibim Kalguksu gives you a much better sense of what the restaurant does.
